Halibut is the common term given to three species of flatfish that belong to the family of right-eye flounders and are found in the genera Hippoglossus and Reinhardtius. In some locations, and less commonly, other species of giant flatfish are sometimes referred to as halibut.

Because this dish is so common on Catholic holy days, the phrase is a combination of the words holy and butte, which refers to a flat fish. Both as a food fish and as a sport fish, halibut are held in very high respect. Halibut are classified as demersal fish.
